HOW TO FILL AND FOLD TAMALES - It’s so simple once you get the hang of it, but there are a few tips and tricks we’ve got up our sleeves. 1. Make sure your hojas (corn husks) have been well-soaked in warm water for at least 15 minutes. Wring them out or dry with a dishtowel before filling. 2. When you’re getting ready to fill, arrange the husk so the wide end is closest to you and the smooth side is facing up. 3. Use a spoon, spatula, bench scraper or your hands to spread a thin, even layer of ma
